Beetroot Soup
Did you know that eating beetroot can help fight cancer? Many people associate beetroot only with blood forming ingredient due to its red color but the truth lies that that beetroot is healthy and good for the overall well being of a person. The root as well as the leaves of beetroot is nutritious and beneficial and it is the root as well as the green leafy part of beetroot which contains iron, foliate and even Vitamin C. It has been found that beetroot contains certain anti-carcinogens which help fight cancer along with increasing uptake of oxygen by the body. Moreover, its main benefits are that it is a great source of fiber with very little fat or calories. Beetroot can be eaten raw and it can also be used in the form of a healthy soup.
Beetroot soup provides taste with health and it can be easily prepared at home. It has a stimulating effect on liver’s detoxification process and its fibers help in promoting healthy cholesterol levels and bowel function. Being rich in folic acid, fiber, manganese, potassium and phosphorus, beetroots are a healthy and a nutritious form of food item which can be easily made into soup to experience taste with health .Simple, healthy yet delicious beetroot soup can be made at home by following the given recipe.
One should first grate and boil the beetroots and keep them aside. Dry roast 1 tsp maize flour till golden brown and keep them aside. Then one should sauté the chopped onions till light brown. To this, one should add water, beetroot and soup and cook for 10-15 minutes. Transfer this to liquidizer and churn properly and then re-boil the mixture. Turn off the gas, add lemon juice, vinegar and black pepper to the soup and serve hot. One can also add good dollop of natural yogurt or low fat sour cream to provide it with an added flavor.
