SPINACH SUBJI

Ingredients

  • 6 cups chopped spinach
  • ½ cup yellow mung or tur dal
  • 2 cups water
  • 1 tbsp safflower oil
  • 1 tsp black mustard seeds
  • 1 tsp cumin seeds
  • 1 clove garlic chopped
  • 1-pinch salt
  • 1-pinch hing
  • 1 small green chili, chopped

Method –

Wash the spinach and the dal twice. Put them into a pot with water & cook, uncovered, until tender for about ½ hour. Tur dal may take longer. Crush partially the cooked dal and spinach slightly and set aside. On other hand, heat a pan on medium heat and add the oil. Put cumin seeds, mustard seeds, hing, garlic, chili. Cook until garlic browns.

Pour in the cooked spinach and dal mixture. Add the salt and bring to boil. Remove from the heat and serve.

Medicinal value –

Vata and Pitta prakriti person can eat it but not often. Pitta dosha aggravates. This is best for Kapha prakriti. It helps reducing obesity. It also increases appetite. This being roughage, helps in digestion and prevents colon cancer. It has been shown that this preparation helps lungs and detoxifies the blood, making them strong.
