GRATED POTATO SUBJI

Ingredients

  • 2 tbsp safflower oil
  • 4 cups white potatoes
  • ½ tsp black mustard seeds
  • ½ tsp cumin seeds
  • 1-pinch hing
  • ½ tsp turmeric
  • ½ small green chili, chopped
  • ¼ tsp ajwain
  • ¼ tsp salt

Method

Wash, peel and grate the potatoes. Wash them once again and drain them well. Heat a deep frying pan on medium heat and add the oil, mustard seeds, cumin seeds and hing. Wait until seeds pop up; add the chili, turmeric and ajwain followed by salt. Stir and add the potatoes and mix well to coat with the spices.

Turn down the heat to low, cover and cook for at least 5 minutes. Stir, and then cook for another 5 minutes. Let it sit on the stove with the lid on and no flame for few minutes and it becomes more tender and gets together.

Medicinal value

The hing, chili and ajwain help reducing the Vata dosha aggravating qualities of the potatoes. Pitta prakriti person should eat with caution. This increases digestive power.
