FRIED RICE
Ingredients
- 2-½ cup water
- 1-cup basmati rice
- ½ tsp salt
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 3 tbsp sunflower oil
- 1-pinch hing
- 1-pinch turmeric
- ½ large onion, cut lengthwise into fine strips
- 7 curry leaves, fresh or dried
- 2 tbsp cilantro, chopped
- ½ green chili, chopped
Method –
Wash the rice and drain. To a medium pot, add three rice, water and salt. Bring to a boil. Partially cover and boil gently for 5 mintues. Turn down the heat to slimmer, cover and cook until gets together, about 15 minutes. Heat a heavy frying pan on medium heat. Add the oil and when it becomes hot add the cumin and mustard seeds. Wait until they pop up. Add the rest of the spices and the onion. Sauté until the onions brown and soft. Add the cooked rice to the spices and onions. Stir quickly and serve hot.
Medicinal value –
Rice has amla vipaka (end product after digestion is sour tasted) and hence to be used with caution. However it is light diet if taken in normal and small quantity. All he spices makes it more light and hence it is good appetizer.
