KHICHARI
It is a seasoned mixture of rice and mung dal, is basic to the ayurvedic way of life. Basmati rice and mung dal both have the qualities of bieng sweet and cooling with a sweet after taste. Mixing of the cereal with pulses create a very balance diet. It is excellent protein combination and is tridoshic. This is said to be an excellent and most winning combination for digestion. It is very light to digest and hence gives less burden to the system. This nourishes the body and also gives nutrition.
Usually it is two part of rice and one part of dal in general preparation. Some places they fry the khichri by adding spices, chilies, garlic and many other masalas.
The recipes for khichari serves 4-5 people.
MOONG DAAL KHICHARI FOR VATA DOSHA
INGREDIENTS:
- 1 cup basmati rice
- ½ cup yellow split mung dal
- 3 tbsp ghee
- 1 tsp black mustard seeds
- 1 tsp cumin seeds
- ½ tsp turmeric
- 2 pinches hing (asafoetida)
- ½ tsp salt
- 4 cup water
Method –
firstly the wash the rice and mung dal well. Better mung dal is soaked for few hours before cooking as it is more digestable. Few parts of india soakes both the ingredients. In a cooker or saucepan over medium heat, the ghee is heated and mustard seeds are added with cumins and hing. Stir a moment until the seeds pop. Then add the mung dal, rice, turmeric and salt and stir until well blended with the spices.
Add the water and bring to a boil. Boil for 5 minutes, uncovered, stirring occasionally. Turn down the heat to low and cover, leaving the lid slightly ajar. Cook until tender, about ½ hour.
However this is for all the doshas but specifically good for Vata dosha.
