MUNG DAL KHICHARI FOR TRIDOSHIC
Ingredients
- 1 cup basmati rice
- 1 cup yellow mung dal
- 1 inch piece of fresh ginger, peeled and chopped fine
- 2 tbsp shredded, unsweetened coconut
- 1 small handful fresh cilantro leaves
- 6 cups water
- ¼ tsp turmeric
- ¼ tsp salt
- 10 black peppercorns
- 3 bay leaves
- 5 whole cloves
- 1 ½ inch piece of cinnamon bark
- 3 tbsp ghee
Method – soak the mung dal and rice for atleast 2 hr. in a blender, put the ginger, coconut, cilantro and ½ cup water and blend until liquefied. Then heat a large sauce pan on medium het and add the ghee, cinnamon, cloves, cardamom, peppercorns and bay leaves. Stir for sometime till fragrance starts coming. Add the blended items into that followed by turmeric and salt. Stir until lightly brown color.
Stir the mung dal and rice well add into the above gravy and mix it well. Pur in the 6 cups of water, cover and bring to a boil for about 5 mintues. Turn down the heat to very low and cook, lightly covered, until the dal and rice are soft and mixed almost with each other. This may take ½ hour to get cooked.
This preparation is an excellent for tridoshic (all the dosha in balance) prakriti.
